Hummus toast with cucumber and tomato

Rico's note: Make this when you want something light that still fills you up — the hummus gives it body without weighing you down.

Ingredients

  • 2 slices gluten-free bread (80 g / 2¾ oz)
  • 3 tbsp hummus (60 g / 2 oz)
  • ½ cucumber (100 g / 3½ oz)
  • 6 cherry tomatoes (50 g / 1¾ oz)
  • 1 handful of arugula (10 g)
  • 5 g sesame seeds
  • 1 tbsp olive oil (10 g)

Method

  1. Toast the bread until crisp.
  2. Spread the hummus generously over each slice.
