Hummus and roasted vegetable wrap

A tortilla filled with creamy hummus and colorful roasted vegetables.

Rico's note: Roast all the vegetables on Sunday night and you can put this wrap together in two minutes on a workday morning.

Ingredients

  • 4 large flour tortillas (320 g / 11½ oz)
  • 320 g (11½ oz) hummus
  • 200 g (7 oz) zucchini, cut into strips
  • 200 g (7 oz) bell pepper, cut into strips
  • 100 g (3½ oz) cooked beets, cut into strips
  • 80 g (2¾ oz) fresh spinach
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Cut the zucchini and bell pepper into strips, season with olive oil, salt and pepper, and roast at 200 °C (400 °F) for 20 to 25 minutes, until tender and golden at the edges.
  2. Let the roasted vegetables cool slightly.
