Brussels sprouts with lemon garlic sauce

A side that's crispy outside and wins over even this unpopular vegetable's critics.

Rico's note: If boiled Brussels sprouts never won you over, try them in the air fryer with this sauce — it's a different story; they're almost addictive.

Ingredients

  • 400 g (14 oz) Brussels sprouts — halved
  • 1½ tbsp extra-virgin olive oil (15 g / ½ oz)
  • 3 cloves garlic, minced (15 g / ½ oz)
  • 1 lemon, zest and juice (15 g / ½ oz)
  • 20 g (¾ oz) grated Parmesan — optional
  • sea salt and black pepper, to taste

Method

  1. Wash the Brussels sprouts, remove any damaged outer leaves and cut each one in half.
  2. Season with the olive oil, garlic, salt and pepper.
