Quantities and times are a starting point: adjust them to your taste. Two things don't change: poultry and ground meat must be cooked all the way through, and allergens — always check the labels.

Hot chocolate with dates

A hot drink made with pure cocoa, sweetened only with dates.

Rico's note: Make this on cold winter nights instead of anything powdered from a packet — it's ready before you've even kicked off your slippers.

Ingredients

  • 300 ml (1¼ cups) almond or coconut milk
  • 2 tbsp pure cocoa powder (16 g / ½ oz)
  • 2 Medjool dates, blended into a paste (40 g / 1½ oz)
  • 1 tsp vanilla extract (3 g)
  • 1 pinch cinnamon and nutmeg (2 g)
  • 1 pinch sea salt (1 g)

Method

  1. Heat the plant-based milk with the blended dates until it comes to a gentle boil.
  2. Add the cocoa powder and whisk well until completely dissolved.
