Guacamole eggs with smoked salmon

A quick appetizer with a creamy avocado filling and a smoky touch.

Rico's note: Pull this trick out when friends drop by unexpectedly: it looks lovely on the plate and takes no more than twenty minutes.

Ingredients

  • 6 large eggs (300 g / 10½ oz)
  • 1 small ripe avocado (100 g / 3½ oz)
  • 50 g (1¾ oz) smoked salmon
  • 15 ml (1 tbsp) lime juice
  • 10 g fresh cilantro, chopped
  • 20 g (¾ oz) red onion, finely chopped
  • salt and freshly ground black pepper, to taste

Method

  1. Lower the eggs into a pot of boiling water and cook for about 10 minutes. Cool them in cold water, peel and cut in half lengthwise.
  2. Carefully scoop out the yolks and set them aside in a bowl.
