Grilled chicken with gingery sautéed carrots
Grilled chicken with golden carrots sautéed in olive oil and fresh ginger.
Ingredients
- 300 g (10½ oz) chicken breast
- 4 medium carrots, cut into sticks (320 g / 11½ oz)
- 1 piece (3 cm / 1¼ in) fresh ginger, grated (10 g)
- 2 cloves garlic, minced (6 g)
- 1 handful of fresh thyme (5 g)
- 1 tbsp olive oil (15 g / ½ oz)
- ½ lemon, juice only (10 g)
- salt and pepper, to taste
Method
- Cut the carrots into thin sticks and grate the ginger.
- Season the chicken with half the ginger, the garlic and salt, and let it sit for 5 minutes.
