Green banana biomass bread

Fiber and structure without heavy flours, with green banana holding it all together.

Rico's note: Green banana biomass doesn't taste of banana at all — it's just starch binding everything together. Use whatever's left over from your smoothies.

Ingredients

  • 245 g (8½ oz) green banana biomass (green banana purée), at room temperature
  • 150 g (5½ oz) rice flour
  • 90 g (3¼ oz) gluten-free oat flour
  • 60 g (2 oz) cassava starch (polvilho doce)
  • 1 tsp salt (6 g)
  • 1 tbsp baking powder (12 g)
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp olive oil (30 g / 1 oz)
  • 120 ml (½ cup) water or plant-based milk

Method

  1. Heat the oven to 180 °C (350 °F) and grease the pan.
  2. With an immersion blender or a food processor, blend the banana biomass, eggs, olive oil and water into a smooth cream.
