Gluten-free skillet English muffins

Fluffy little breads full of nooks and crannies, cooked in a skillet with no oven.

Rico's note: Make a batch on Sunday, split them and freeze, and on busy days just pull out two halves and pop them in the toaster.

Ingredients

  • 1 cup almond flour (100 g / 3½ oz)
  • ½ cup coconut flour (55 g / 2 oz)
  • 3 tbsp psyllium husk (24 g / ¾ oz)
  • 1 tsp baking powder (4 g)
  • ½ tsp salt (3 g)
  • 1 egg (50 g / 1¾ oz)
  • 1 tbsp olive oil (13 g)
  • ¾ cup warm water (180 g / 6½ oz)
  • olive oil, for greasing — for the skillet and the rings

Method

  1. In a bowl, mix the dry ingredients: the flours, psyllium husk, baking powder and salt.
  2. In another bowl, whisk the egg with the olive oil and warm water.
