Gluten-free Portuguese cornbread (broa)

A golden crust and a moist crumb, great with soup.

Rico's note: A thick slice of this broa alongside a bowl of caldo verde (Portuguese kale soup) makes a complete dinner on a cold day.

Ingredients

  • 120 g (4 oz) precooked cornmeal flakes
  • 140 g (5 oz) fine cornmeal
  • 120 g (4 oz) sweet cassava starch (polvilho doce)
  • 1 tsp salt (6 g)
  • 1 tbsp fennel seeds (6 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • 120 ml (½ cup) coconut milk
  • 67 ml (¼ cup) coconut oil

Method

  1. In a bowl, hydrate the cornmeal flakes and the cornmeal with the warm coconut milk for 10 minutes.
  2. Preheat the oven to 180 °C (350 °F) and grease the pan.
