Garden purslane soup

Quick and fresh, with the purslane added almost raw at the end.

Rico's note: A soup in the old vegetable-garden tradition, where purslane was a summer regular. Make it simply, no fuss needed.

Ingredients

  • 300 g (10½ oz) fresh purslane, washed
  • 3 potatoes, cut into pieces (450 g / 16 oz)
  • 1 onion, quartered (150 g / 5½ oz)
  • 2 cloves garlic (6 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Cook the potatoes with the onion and garlic in salted water for about 15 minutes.
  2. Once the potatoes are tender, crush them lightly with a fork or a spoon.
