Flourless apple pancakes

Just apple and egg, with no flour at all.

Ingredients

  • 2 large apples (300 g / 10½ oz)
  • 2 eggs (100 g / 3½ oz)
  • ½ tsp ground cinnamon (2 g)
  • ½ tsp vanilla extract (5 g)
  • 1 tbsp coconut oil (10 g) — for greasing the skillet
  • 15 g (½ oz) chopped walnuts — optional, to serve

Method

  1. Coarsely grate the apples, skin on.
  2. Beat the eggs in a bowl with the cinnamon and vanilla.
