Fava bean soup with mint

A rustic texture, with fresh mint for brightness.

Rico's note: Perfect after a Saturday workout — fava beans leave you feeling full in a way an ordinary vegetable soup doesn't.

Ingredients

  • 400 g (14 oz) fresh fava beans, shelled
  • 2 potatoes, diced (300 g / 10½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • fresh mint, to taste (5 g)
  • 1.2 liters (5 cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Sauté the onion and garlic in the olive oil until translucent.
  2. Add the diced potatoes and the water, and simmer for 15 minutes.
