Date and coconut bites

Sweet, natural bites to satisfy a craving without opening a chocolate bar.

Rico's note: Make a batch on Sunday and keep them in the fridge all week — they take care of any sweet craving without you reaching for a chocolate bar.

Ingredients

  • 6 pitted Medjool dates (60 g / 2 oz)
  • 16 g (½ oz) unsweetened shredded coconut
  • 1 tbsp sesame seeds (9 g)
  • 10 g extra shredded coconut, for rolling

Method

  1. Cut the dates in half and double-check that no pits are left.
  2. Blitz the dates with the shredded coconut and sesame seeds in a food processor until you have a sticky, even paste.
