Dark buckwheat, cocoa and coffee bread

Dark in color, with a roasted coffee aroma, great topped with peanut butter.

Rico's note: The coffee adds color, not coffee flavor — even people who don't like coffee eat this bread without suspecting a thing.

Ingredients

  • 1 cup buckwheat flour (120 g / 4 oz)
  • 1 cup almond flour (100 g / 3½ oz)
  • ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
  • 2 tbsp 100% cocoa powder (10 g)
  • 1 tbsp instant coffee, dissolved in the water (15 g / ½ oz)
  • 2 tbsp psyllium husk (16 g / ½ oz)
  • 1 tsp salt (6 g)
  • 1 tbsp active dry yeast (10 g)
  • 2 tsp sugar (8 g) — no added sugar: 1 tbsp erythritol (12 g)
  • 1¼ cups warm water, to dissolve the coffee (300 g / 10½ oz)
  • 3 tbsp olive oil (30 g / 1 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Dissolve the coffee and sugar in the warm water and add the yeast; let it activate for 5 minutes.
  2. Mix the dry ingredients: flours, cassava starch, cocoa, psyllium and salt.
