Crunchy no-added-sugar meringues

Oven-dried meringues, light and almost calorie-free.

Rico's note: Keep whipping until you can no longer feel any grains of erythritol when you rub a little meringue between your fingers — it's a more reliable test than watching the clock.

Ingredients

  • 4 egg whites (120 g / 4 oz)
  • 1 cup powdered erythritol (120 g / 4 oz)
  • 1 tsp cream of tartar, or vinegar (5 g)
  • 1 tsp vanilla (4 g)

Method

  1. Preheat the oven to the lowest temperature it will go, between 90 °C (194 °F) and 100 °C (212 °F). Line a baking sheet with parchment paper.
  2. In a stand mixer, with a spotlessly clean, dry bowl, beat the egg whites with the cream of tartar until foamy.
