Creamy red lentil soup with coconut milk

A creamy, spiced soup, ready in 35 minutes.

Rico's note: Make a big pot on Sunday and you've got work lunches for the whole week. Whatever you don't eat within 4 days goes in the freezer.

Ingredients

  • 200 g (7 oz) red lentils
  • 400 ml (1¾ cups) coconut milk (canned)
  • 1 medium onion (110 g / 4 oz)
  • 2 cloves garlic (6 g)
  • 1 piece (2 cm / ¾ in) fresh ginger, grated (10 g)
  • 1 tsp ground turmeric (3 g)
  • 100 g (3½ oz) fresh spinach
  • 700 ml (3 cups) vegetable broth or water
  • 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
  • fresh cilantro, to taste — optional
  • salt and pepper, to taste

Method

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the garlic and grated ginger and cook for 1 more minute, until fragrant.
