Creamy corn cake

Two textures in one cake — creamy at the bottom, fluffy on top.

Rico's note: This is one of those cakes that keeps for two days and is still good cold, straight from the fridge after a workout.

Ingredients

  • 1½ cups fine cornmeal (225 g / 8 oz)
  • 1 cup unsweetened shredded coconut (80 g / 2¾ oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 4 eggs (200 g / 7 oz)
  • 2 cups coconut milk (480 g / 1 lb)
  • ½ cup melted coconut oil (100 g / 3½ oz)
  • 1 tbsp baking powder (12 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a rectangular baking pan or a round cake pan.
  2. In the blender, blend the eggs, coconut milk, coconut oil and sugar for 2 minutes.
