Creamy chocolate tofu cake

Ingredients

  • 85 g (3 oz) firm tofu
  • ½ ripe banana (60 g / 2 oz)
  • 20 g (¾ oz) oat flour
  • 1 egg (50 g / 1¾ oz)
  • 20 g (¾ oz) reduced-fat cocoa powder
  • 12 g chocolate protein powder
  • 30 ml (2 tbsp) espresso (or 30 ml milk)
  • salt, to taste
  • 60 g (2 oz) low-fat Greek yogurt, for the topping
  • 12 g chocolate protein powder, for the topping
  • 5 g chopped peanuts, to finish

Method

  1. Blend the tofu, banana, oat flour, egg, cocoa, protein powder and espresso into a smooth, even batter.
  2. Pour into a microwave-safe bowl.
