Cream of zucchini soup with fresh basil

A light soup to end the week at peace with your stomach.

Rico's note: The soup for when the fridge is almost empty but there are still a few zucchini lying around.

Ingredients

  • 2 zucchini (400 g / 14 oz)
  • 1 potato (150 g / 5½ oz)
  • 1 onion (80 g / 2¾ oz)
  • 1½ tbsp olive oil (15 g / ½ oz)
  • 1 handful of fresh basil (10 g)
  • water and salt, as needed

Method

  1. Sauté the onion in a drizzle of olive oil for 3–4 minutes.
  2. Add the diced zucchini and potato, cover with water and season with salt.
