Cranberry bean and tomato soup

Hearty and inexpensive, perfect for stocking the fridge for the week.

Rico's note: Make a double batch — freeze it in portions and it rescues any night you get home late with no patience to cook from scratch.

Ingredients

  • 300 g (10½ oz) cooked catarino beans (or pinto beans)
  • 2 carrots, diced (160 g / 5½ oz)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 tomatoes, chopped (240 g / 8½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1 bay leaf (0.2 g)
  • fresh parsley, to taste (5 g)
  • 1½ liters (6¼ cups) water
  • 3 tbsp olive oil (30 g / 1 oz)

Method

  1. Sauté the onion, garlic and chopped tomatoes in the olive oil for about 5 minutes.
  2. Add the diced carrots and potato.
