Coffee bitterness and walnut crunch, without wheat flour.

Rico's note: Bake it on Friday night and have a slice with Saturday breakfast — it smells just like a bakery.

Ingredients

  • 1 cup buckwheat flour (120 g / 4 oz)
  • 1 cup almond flour (100 g / 3½ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (135 g)
  • 1 tbsp baking powder (12 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup strong brewed coffee, cold (120 g / 4 oz)
  • ½ cup coconut oil (100 g / 3½ oz)
  • ½ cup chopped walnuts, optional (50 g / 1¾ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: buckwheat flour, almond flour, sugar, baking powder and the walnuts, if using.
