Coconut dulce de leche

Caramel-colored, with a taste of childhood.

Ingredients

  • 200 ml (¾ cup) full-fat coconut milk
  • ⅓ cup sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (100 g)
  • 1 tsp vanilla extract (4 g)
  • 1 pinch baking soda (1 g) — gives a caramel color

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a heavy-bottomed saucepan, mix the coconut milk, sugar and vanilla.
  2. Set it over medium-low heat.
