Chocolate petit gâteau
A warm chocolate cake with a molten center, ready in under half an hour.
Ingredients
- 100 g (3½ oz) 100% cacao chocolate (bar)
- 4 tbsp coconut oil (52 g / 1¾ oz)
- 2 whole eggs (100 g / 3½ oz)
- 2 egg yolks (34 g / 1¼ oz)
- 3 tbsp white or brown sugar (36 g / 1¼ oz) — no added sugar: 4 tbsp erythritol (or xylitol) (48 g)
- 2 tbsp almond flour (18 g / ¾ oz)
- 1 pinch salt (1 g)
- cocoa powder, as needed — for dusting the ramekins
In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect. Keep it away from dogs: xylitol is toxic to them.
Method
- Preheat the oven to 220 °C (425 °F). Grease 4 ramekins very well and dust them with cocoa powder.
- Melt the chocolate with the coconut oil in a double boiler and let it cool slightly.
The full method (8 steps), Rico's tip, the variations and storage are in the ebook “Quick & Easy”. The English edition is coming soon.
