Chocolate orange cake

The classic chocolate-orange pairing, gluten-free.

Rico's note: A great pick for Friday dinners — the orange zest fills the house with its aroma the moment you open the oven.

Ingredients

  • 1½ cups almond flour (144 g / 5 oz)
  • ½ cup cocoa powder (45 g / 1½ oz)
  • ½ cup white or brown sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (142 g)
  • zest of 2 oranges
  • 1 tbsp baking powder (12 g)
  • 4 eggs (200 g / 7 oz)
  • ½ cup coconut oil (103 g / 3¾ oz)
  • ½ cup fresh orange juice (120 g / 4 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Heat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: almond flour, cocoa, sugar, orange zest and baking powder.
