Chocolate mint cake

Intense cocoa batter with a fresh hint of mint.

Ingredients

  • 144 g (5 oz) almond flour
  • 45 g (1½ oz) cocoa powder
  • 105 g (3¾ oz) white or brown sugar — no added sugar: 150 g erythritol
  • 1 tsp baking powder (5 g)
  • 3 eggs (150 g / 5½ oz)
  • 109 g (3¾ oz) coconut oil
  • 60 ml (¼ cup) water
  • 1 tsp mint extract (4 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a pan.
  2. In a bowl, mix the almond flour, cocoa powder, sugar and baking powder.
