Chocolate coffee skillet cake

A warm breakfast that tastes of chocolate and coffee.

Rico's note: When there's a little coffee left at the bottom of the cup, put it into this cake.

Ingredients

  • 1 egg (50 g / 1¾ oz)
  • 50 g (1¾ oz) cottage cheese (or low-fat Greek yogurt)
  • 20 g (¾ oz) oat flour
  • 10 g reduced-fat cocoa powder
  • 15 g (½ oz) chocolate protein powder
  • 1 espresso (30 g / 1 oz)
  • ground cinnamon, to taste
  • 1 square 85% dark chocolate, for the topping (5 g) — no added sugar: sugar-free 85% dark chocolate, for the topping
  • olive oil, for greasing

Method

  1. In a bowl, beat the egg with the cottage cheese until creamy.
  2. Add the oat flour, cocoa, protein powder, espresso and cinnamon. Mix until you have a smooth batter.
