Chicken with spiced cauliflower rice

Diced chicken with riced cauliflower, seasoned with warm spices.

Rico's note: Reach for riced cauliflower whenever you want a full plate without piling on the carbs — it works beautifully with bold spices.

Ingredients

  • 250 g (9 oz) chicken breast, diced
  • 1 large head of cauliflower (500 g / 1 lb)
  • 1 tsp turmeric (3 g)
  • 1 tsp cumin (2 g)
  • 1 tsp paprika (5 g)
  • 1 piece (1 cm / ½ in) fresh ginger, grated (8 g)
  • 1 clove garlic, minced (6 g)
  • ½ chopped onion (50 g / 1¾ oz)
  • 1 handful of fresh cilantro, chopped (10 g)
  • 1 tbsp olive oil (15 g / ½ oz)
  • salt and pepper, to taste

Method

  1. Cut the chicken into small cubes and season with half the spices (turmeric, cumin, paprika), salt and pepper.
  2. Pulse the raw cauliflower in a food processor (or a Thermomix® or similar), or grate it coarsely, until it looks like rice.
