Chicken and vegetable quiche

A crustless quiche full of chicken, mushrooms and spinach.

Rico's note: Chop everything small and mix it without fuss — it's one of those forgiving recipes.

Ingredients

  • 5 eggs (250 g / 9 oz)
  • 2 medium chicken breasts (550 g / 1¼ lb) — cut into small pieces
  • 100 g (3½ oz) mushrooms
  • 100 g (3½ oz) grated carrot
  • 100 g (3½ oz) spinach (or other vegetables)
  • 100 g (3½ oz) cottage cheese (or low-fat yogurt)
  • 80 g (2¾ oz) shredded reduced-fat cheese — for sprinkling
  • salt, pepper, paprika and garlic powder, to taste

Method

  1. Cut the chicken breast into small pieces and season well.
  2. In a bowl, combine the chicken, eggs, mushrooms, grated carrot, spinach and cottage cheese. Fold everything together until well mixed.
