Chicken and sweet potato curry

One pot, comforting, and even better the next day.

Rico's note: Make a double batch on Sunday and it becomes lunch for two or three days of the week — just reheat.

Ingredients

  • 300 g (10½ oz) chicken breast, diced
  • 1 large sweet potato, diced (250 g / 9 oz)
  • 1 chopped onion (100 g / 3½ oz)
  • 2 cloves garlic, minced (6 g)
  • 2 tbsp curry powder (12 g)
  • 200 ml (¾ cup) light coconut milk
  • 1 tsp fresh ginger, grated (2 g)
  • fresh cilantro, to taste
  • 1½ tbsp olive oil (15 g / ½ oz)
  • salt, to taste

Method

  1. Heat the olive oil in a saucepan and sauté the onion and garlic until translucent.
  2. Add the chicken and brown it on all sides.
