Celery and apple soup

Apple softens the bitterness of celery without making the soup sweet.

Rico's note: Celery on its own can be a bit too bitter — apple fixes that with no sugar and no tricks.

Ingredients

  • 4 stalks celery with leaves, cut into pieces (160 g / 5½ oz)
  • 1 green apple, peeled and cut into pieces (150 g / 5½ oz)
  • 1 potato, diced (150 g / 5½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 1 liter (4¼ cups) water
  • 2 tbsp olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Sauté the onion in the olive oil until translucent.
  2. Add the celery, apple and potato, cut into pieces.
