Carrot soup with fresh cilantro

Simple and striking, with cilantro adding color and freshness.

Rico's note: A trick worth knowing: half the cilantro goes into the soup, the other half is just for garnish. It changes the flavor completely.

Ingredients

  • 500 g (1 lb) carrots, sliced into rounds
  • 2 potatoes, diced (300 g / 10½ oz)
  • 1 chopped onion (150 g / 5½ oz)
  • 2 cloves garlic, minced (6 g)
  • plenty of fresh cilantro, to taste (15 g / ½ oz)
  • 1.2 liters (5 cups) water
  • 3 tbsp olive oil (30 g / 1 oz)
  • salt, to taste

Method

  1. Sauté the onion and garlic in the olive oil until lightly golden.
  2. Add the carrot and potatoes, cut into pieces.
