Carrot roll with smoked salmon

A carrot and cheese base rolled up with avocado and salmon.

Rico's note: Use the parchment paper to roll it, like a sushi mat — it's much easier and the base won't crack.

Ingredients

  • 2 carrots, grated (200 g / 7 oz)
  • 2 eggs (100 g / 3½ oz)
  • 100 g (3½ oz) shredded reduced-fat cheese
  • salt, pepper and garlic powder, to taste
  • ½ avocado (75 g / 2¾ oz)
  • 150 g (5½ oz) smoked salmon

Method

  1. Preheat the oven to 180 °C (350 °F).
  2. In a bowl, mix the grated carrots, eggs and grated cheese. Season with salt, pepper and garlic powder and stir until evenly combined.
