Carrot ginger soup

A simple soup, sweet and spicy at the same time.

Rico's note: Make this soup when all that's left in the fridge is carrots and onions — it always hits the spot.

Ingredients

  • 4 carrots (400 g / 14 oz)
  • 1 onion (100 g / 3½ oz)
  • 1 piece fresh ginger (15 g / ½ oz)
  • 1½ tbsp olive oil (15 g / ½ oz)
  • water and salt, as needed

Method

  1. Sauté the chopped onion in a drizzle of olive oil for 3–4 minutes.
  2. Add the sliced carrots and chopped ginger, cover with water and season with salt.
