Ingredients

  • 144 g (5 oz) almond flour
  • 56 g (2 oz) coconut flour
  • 32 g (1¼ oz) carob powder
  • 70 g (2½ oz) sugar — no added sugar: 100 g erythritol
  • 2 tsp baking powder (8 g)
  • ½ tsp salt (3 g)
  • 4 eggs (200 g / 7 oz)
  • 120 ml (½ cup) coconut milk
  • 55 g (2 oz) melted coconut oil

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Combine the dry ingredients: the flours, carob powder, sugar, baking powder and salt.
