Buttery cashew bread

A soft crumb and a buttery aroma, without a drop of dairy.

Rico's note: Grind raw cashews at home if you want to save on store-bought flour; it's cheaper and the bread is just as good.

Ingredients

  • 168 g (6 oz) cashew flour — raw cashews, finely ground
  • 150 g (5½ oz) rice flour
  • 60 g (2 oz) cassava starch (polvilho doce)
  • 1 tbsp baking powder (12 g)
  • ½ tsp salt (3 g)
  • 2 tbsp sugar (24 g / ¾ oz) — no added sugar: 3 tbsp erythritol (36 g)
  • 3 eggs (150 g / 5½ oz)
  • 120 ml (½ cup) coconut milk
  • 55 g (2 oz) melted coconut oil

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F). Grease the loaf pan and dust it with a little rice flour.
  2. In a bowl, mix the flours, starch, baking powder, salt and sugar.
