Tomato, almond and basil pesto, from Sicily

A pasta from western Sicily with a raw pesto of tomato, almond, basil, garlic, pecorino and olive oil. Busiate hold the mixture in their spirals; when you can't find them, a short twisted pasta works as a substitute. The sauce never goes on the heat: it's loosened with pasta water only when you toss.

Rico's note: A raw pesto doesn't need to be perfectly smooth. The texture of the almond and tomato is part of the dish.

Ingredients

  • 320 g (11½ oz) dried busiate
  • 300 g (10½ oz) ripe raw tomato
  • 60 g (2 oz) blanched almonds
  • 30 g (1 oz) fresh basil
  • 40 g (1½ oz) pecorino
  • 40 g (1½ oz) extra-virgin olive oil
  • 4 g garlic
  • 0.3 g black pepper
  • water and coarse salt for cooking the pasta, as needed
  • salt, to taste — for the pesto

Method

  1. Score a shallow X in the base of each tomato. Blanch for 30–45 seconds, plunge into cold water and peel.
  2. Open the tomatoes, remove the tough core and take out just the seeds and any very loose liquid. Weigh out 300 g of flesh and cut it into pieces.
