Buckwheat and rice sandwich loaf

The classic sandwich loaf, gluten-free, for slicing and toasting.

Rico's note: A great loaf to keep in the freezer for mornings when there's no time for anything but the toaster and coffee.

Ingredients

  • 1½ cups buckwheat flour (180 g / 6½ oz)
  • 1 cup rice flour (150 g / 5½ oz)
  • ½ cup sweet cassava starch, polvilho doce (60 g / 2 oz)
  • 3 tbsp psyllium husk (24 g / ¾ oz)
  • 1 tsp salt (6 g)
  • 1 tbsp active dry yeast (10 g)
  • 2 tsp sugar (8 g) — no added sugar: 1 tbsp erythritol (12 g)
  • 1½ cups warm water (360 g / 12½ oz)
  • 2 eggs (100 g / 3½ oz)
  • 3 tbsp olive oil (30 g / 1 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Activate the yeast in the warm water with the sugar and let it sit for 5 minutes.
  2. Mix the dry ingredients: flours, cassava starch, psyllium and salt.
