Brown rice bowl with edamame and sesame

Cold brown rice with edamame, carrot and a soy-sesame dressing.

Rico's note: Dice the cucumber small and mix everything into the rice while it's still warm — that way the soy sauce soaks in better by the time you eat.

Ingredients

  • 280 g (10 oz) brown rice, uncooked
  • 320 g (11½ oz) cooked edamame, shelled
  • 150 g (5½ oz) grated carrot
  • 150 g (5½ oz) cucumber, finely diced
  • 40 g (1½ oz) soy sauce
  • 2 tbsp sesame seeds (20 g / ¾ oz)
  • 2 tbsp rice vinegar (20 g / ¾ oz)
  • black pepper, to taste

Method

  1. Cook the brown rice in salted water for about 25 minutes, until tender. Drain.
  2. While the rice is still warm, season it with the soy sauce and rice vinegar so it soaks up the flavor.
