Blueberry yogurt cake

A soft yogurt cake dotted with fresh or frozen blueberries.

Rico's note: This is the cake for when your blueberries are about to go bad in the fridge. Tossing them in flour before mixing is the only secret to keeping them from sinking.

Ingredients

  • 1 cup fresh or frozen blueberries (145 g / 5 oz)
  • 1½ cups almond flour (144 g / 5 oz)
  • 1 cup gluten-free oat flour (90 g / 3¼ oz)
  • ½ cup sugar (100 g / 3½ oz) — no added sugar: ¾ cup erythritol (150 g)
  • 1 tbsp baking powder (12 g)
  • 1 lemon, zest only (2 g)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup plain yogurt (122.5 g / 4½ oz)
  • ⅓ cup coconut oil (67 g / 2¼ oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a pan.
  2. In a bowl, mix the flours, sugar, baking powder and lemon zest.
