Blueberry oat muffins

A fluffy, moist breakfast, ready in 25 minutes in the air fryer.

Rico's note: Bake a tray of these on Sunday night and breakfast is sorted for the whole week.

Ingredients

  • 180 g (6½ oz) oat flour
  • 50 g (1¾ oz) coconut sugar (or a natural sweetener)
  • 2 tsp baking powder (10 g)
  • ½ tsp ground cinnamon (1 g)
  • 1 large egg (55 g / 2 oz)
  • 1 cup plant-based milk, almond or oat (120 g / 4 oz)
  • 4 tbsp olive oil (60 g / 2 oz)
  • 1 tsp vanilla extract (5 g)
  • 150 g (5½ oz) fresh or frozen blueberries

Method

  1. In a bowl, mix the oat flour, coconut sugar, baking powder and cinnamon.
  2. In another bowl, beat the egg with the plant-based milk, olive oil and vanilla extract.
