Blender cornbread

Blend it all, pour it into the pan and forget about it until the oven timer goes off.

Rico's note: Blend everything in five minutes when you're short on time but still want fresh bread at home.

Ingredients

  • 1 cup cooked sweet corn (or canned, drained) (170 g / 6 oz)
  • 3 eggs (150 g / 5½ oz)
  • ½ cup coconut milk (120 g / 4 oz)
  • ¼ cup olive oil (55 g / 2 oz)
  • ¼ cup sugar (50 g / 1¾ oz) — no added sugar: ½ cup erythritol (80 g)
  • 1 cup fine cornmeal (150 g / 5½ oz)
  • ½ cup rice flour (60 g / 2 oz)
  • 1 tbsp baking powder (12 g)
  • salt, to taste

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease a loaf pan.
  2. In a blender, blend the corn, eggs, coconut milk, olive oil and sugar until smooth.
