Black bean salad with grilled turkey

Black beans, grilled turkey and corn — a colorful salad in 20 minutes.

Rico's note: Make this for the next day's lunch when you have leftover grilled turkey from another recipe.

Ingredients

  • 250 g (9 oz) cooked black beans
  • 200 g (7 oz) grilled turkey breast, cut into strips
  • 1 cup cooked corn, fresh or frozen (150 g / 5½ oz)
  • 1 red bell pepper, chopped (120 g / 4 oz)
  • ½ red onion, finely chopped (65 g / 2¼ oz)
  • ¼ cup fresh cilantro, chopped (10 g)
  • 1 lemon, juice only (30 g / 1 oz)
  • 2 tbsp extra-virgin olive oil (20 g / ¾ oz)
  • salt and black pepper, to taste

Method

  1. Use turkey breast that's already grilled and cut into thin strips (leftovers from another meal work well).
  2. In a large bowl, combine the cooked black beans, corn, chopped red bell pepper and red onion.
