Whole blackberries hidden in every slice.

Rico's note: A great one for when you find frozen blackberries on sale — no need to thaw them; they go straight into the batter.

Ingredients

  • 1 cup blackberries, fresh or frozen (145 g / 5 oz)
  • 2 cups almond flour (200 g / 7 oz)
  • ⅓ cup sugar (65 g / 2¼ oz) — no added sugar: ½ cup erythritol (90 g)
  • 1 tbsp baking powder (12 g)
  • 1 pinch salt (0.3 g)
  • 3 eggs (150 g / 5½ oz)
  • ⅓ cup coconut oil (66.7 g / 2¼ oz)
  • ¼ cup almond milk (60 g / 2 oz)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. Preheat the oven to 180 °C (350 °F) and grease the pan.
  2. Mix the dry ingredients: almond flour, sugar, baking powder and salt.
