Beef stir-fry lettuce wraps

Stir-fried beef strips in crisp lettuce leaves, ready in 15 minutes.

Rico's note: On hot days, swap the bread for lettuce and nobody notices — it's light and tastes like summer.

Ingredients

  • 200 g (7 oz) lean beef, cut into thin strips
  • 6 iceberg or romaine lettuce leaves (90 g / 3¼ oz)
  • 1 grated carrot (50 g / 1¾ oz)
  • ½ cucumber, cut into sticks (50 g / 1¾ oz)
  • 1 bell pepper, cut into thin strips (50 g / 1¾ oz)
  • 1 handful of chopped fresh mint (5 g)
  • 1 clove garlic, minced (3 g)
  • 1 piece (1 cm / ½ in) fresh ginger, grated (5 g)
  • 1 tsp olive oil (5 g)
  • ½ lemon, juice only (15 g / ½ oz)
  • salt and black pepper, to taste

Method

  1. Slice the beef into very thin strips, against the grain.
  2. Heat the olive oil in a skillet over high heat until it just starts to smoke.
