Almond financiers

Moist little French cakes with brown butter and ground almonds.

Rico's note: Brown butter is what separates an ordinary financier from a good one — don't rush that step; the smell it leaves in the kitchen is worth it.

Ingredients

  • ½ cup butter, or coconut oil (115 g / 4 oz)
  • 1 cup almond flour (100 g / 3½ oz)
  • ⅓ cup powdered sugar (40 g / 1½ oz) — no-added-sugar version: ½ cup powdered erythritol (65 g)
  • ¼ cup rice flour (37.5 g / 1¼ oz)
  • 3 egg whites (90 g / 3¼ oz)
  • 1 tsp vanilla extract (4 g)

In the no-added-sugar version, eating too much erythritol or xylitol can have a laxative effect.

Method

  1. In a small saucepan, melt the butter over medium heat until it turns hazelnut brown (beurre noisette) — if you're using coconut oil, just melt it. Let it cool slightly.
  2. Preheat the oven to 190 °C (375 °F) and grease financier or mini muffin molds well.
