Almond and ghee bread

Low-carb, dense and rich, great with an extra layer of butter.

Rico's note: Cut thin slices of this bread to go with scrambled eggs; it's far more filling than the size of the slice suggests.

Ingredients

  • 200 g (7 oz) almond flour
  • 56 g (2 oz) coconut flour
  • 27 g (1 oz) psyllium powder
  • 2 tsp baking powder (8 g)
  • 1 tsp salt (6 g)
  • 4 eggs (200 g / 7 oz)
  • 73 g (2½ oz) melted ghee
  • 240 ml (1 cup) warm water

Method

  1. Preheat the oven to 180 °C (350 °F) and line the pan with parchment paper.
  2. Mix the flours, psyllium, baking powder and salt in a bowl.
