Algarve-style chickpea soup

Chickpeas, spinach and cilantro in a soup full of southern flavor.

Rico's note: The soup for when you want a taste of the south without leaving your kitchen.

Ingredients

  • 300 g (10½ oz) cooked chickpeas — drained
  • 200 g (7 oz) spinach — washed
  • 2 carrots (160 g / 5½ oz) — sliced into rounds
  • 1 onion (150 g / 5½ oz)
  • 3 cloves garlic (15 g / ½ oz)
  • 1 tomato (120 g / 4 oz) — chopped
  • fresh cilantro, to taste (15 g / ½ oz)
  • 1.2 liters (5 cups) water
  • 3 tbsp olive oil (30 g / 1 oz)

Method

  1. Sauté the onion, garlic and chopped tomato in the olive oil for 3 minutes.
  2. Add the sliced carrot and the water and simmer for 12 minutes.
