Air fryer pataniscas de bacalhau (salt cod fritters)

The classic Portuguese snack, without frying in oil.

Rico's note: The same pataniscas as ever — they just come out of the air fryer instead of the deep fryer.

Ingredients

  • 300 g (10½ oz) salt cod, soaked (desalted)
  • 2 medium potatoes, boiled and mashed (300 g / 10½ oz)
  • 1 small onion, finely chopped (70 g / 2½ oz)
  • 2 cloves garlic, minced (6 g)
  • 1 large egg (55 g / 2 oz)
  • 2 tbsp all-purpose flour, or gluten-free flour (20 g / ¾ oz)
  • ½ tsp ground turmeric (2 g)
  • 2 tbsp chopped fresh parsley (10 g)
  • 1 tbsp olive oil (10 g)
  • salt and black pepper, to taste
  • olive oil spray, as needed

Method

  1. Boil the soaked salt cod for 5 minutes, drain, remove the skin and bones, and flake it very finely.
  2. Boil the potatoes in salted water until soft, drain and mash into a smooth purée with no lumps.
