A moist, comforting loaf made in the air fryer, with no wheat flour.
Ingredients
- 3 ripe bananas, mashed (360 g / 12½ oz)
- 180 g (6½ oz) oat flour
- 60 g (2 oz) chopped walnuts
- 1 large egg (55 g / 2 oz)
- 4 tbsp melted coconut oil (60 g / 2 oz)
- 4 tbsp honey or maple syrup (60 g / 2 oz)
- ⅓ cup plant-based milk, almond or oat (80 g / 2¾ oz)
- 2 tsp baking powder (10 g)
- ½ tsp baking soda (2 g)
- 1 tsp ground cinnamon (3 g)
- 1 pinch grated nutmeg (1 g)
- 1 pinch salt (1 g)
Method
- Preheat the air fryer to 160 °C (325 °F).
- In a large bowl, mash the ripe bananas to a purée.
