Zucchini rolls with sun-dried tomato

Thin, grilled and filled — they look like work, but they aren't.

Ingredients

  • 1 medium zucchini (200 g / 7 oz)
  • 30 g (1 oz) fresh goat cheese — optional
  • 4 sun-dried tomatoes (20 g / ¾ oz)
  • 1 tsp olive oil (5 g)
  • fresh basil leaves, to taste (3 g)
  • black pepper, to taste

Method

  1. Slice the zucchini lengthwise into thin strips, using a mandoline or a sharp knife.
  2. Grill the strips for 1 minute per side, just until they soften.
